WHITE FISH
A wide variety of species, including cod, haddock, whiting, and monkfish, is landed at the fishing ports of Lerwick and Scalloway.
The market for white fish has changed in recent years to become more discerning, which means that customers are now actively seeking premium quality fresh product. White fish caught in Shetland’s waters exceeds expectation and is widely available in top restaurants, hotels and fishmongers.

MACKEREL & HERRING
A state-of-the-art pelagic factory, with excellent landing facilities and rapid processing, supplies the finest herring and mackerel to markets across the UK, Europe, Russia, Japan, and Africa.
Herring and mackerel fillets are sold to the UK’s supermarkets and smokehouses. And in Shetland, the plentiful supply has led to the production of delicious, added-value delicacies such as kippers, smoked mackerel, mackerel pates, marinated herring, and award-winning canned products.

SALMON
Shetland’s salmon farming industry recognises that their future depends on the environment remaining in pristine condition. Through careful husbandry, environmental care and quality control, farmers continue to produce a top quality product.
Shetland salmon is sold all year round to markets throughout the UK, Europe, and the United States, either chilled or frozen whole, in steaks or fillets. Most fish is sold to suppliers in the retail sector or onto secondary processors, who appreciate the quality of the raw fish as a basis for further added value product.
Shetland salmon is available cured and smoked to produce both hot and cold smoked salmon and gravadlax (presented whole or sliced in vacuum packs).
